Well, of course baked potatoe salad is nothing new, letalone some recipe, right? In Croatia people would say, “To je topla voda”, which means, “That’s warm water”. Meaning, that’s invented long time ago. So yes, baked potatoe salad is warm water in terms of invention and originality but I’ll rather think of it as a reminder of what simple ingredients could be thrown together into a nice and tasty dish. Meaning, that’s what I threw on my plate (rather say, oven) in terms of, what can you cook quickly when spending time with your omnivorous parent’s house with pantry full of stuff you don’t eat. And you are lazy to make vegan meat balls and aloo’s and whatnot. Because it’s Saturday and you have to cook for many people and baked potatoes are something everyone can and like to eat.
So let me remind you of this simple meal we had often for lunch or dinner, as a main or a side dish. Or whenever I was lazy to cook. Tender potatoes, just out of the oven and piping hot, sweet and savoury at the same time, cool, crisp veggies just fresh out of the garden… all done and ready to be served in just one hour? With minimal work to do, except some peeling and cutting? Oven does it all!
So how to make it?
Simply bake all the potatoe wedges you want – throw them onto the baking sheet, sprinkle with salt, splash some oil and bake for 35 – 45 mins on 200°C or till potatoes are done. Then, put them into a big bowl, cut some spring onions, tomatoes, whatever veggies you usually like in your salad, taste the salt, add some pepper, few drops of some hot sauce maybe, toss and serve hot, hot!
