The silliest thing about this salad is that French salad, in this form, doesn’t exist in France. Only in Croatia. I know, it doesn’t make much sense. But it is so. This hearty “fit for all” side dish is made in all Croatian regions. There is not a holiday anywhere in my country without a bowl of this mayo salad with green peas, carrots, pickles and boiled eggs. There are also hundreds of real and original “Croatian French Salads” that include or exclude apples, potatoes, mustard, vinegar of lemon juice, but it all comes down to peas, carrots and mayo. And it’s not French at all and I don’t have a clue why is it called French, but pondering on that won’t get us anywhere anyway.
So. With that in mind, I made a vegan version. The simplest substitution: silken tofu instead of boiled eggs and vegan mayonaise instead of eggy one.
French or not, this salad is great when it comes to make ahead salads brimmed with nice veggies and creamy mayo. Soft and sweet carrots and peas. Crispy little apple cubes, silky tofu, sparkling little pickles. It goes with pretty much anything, from baked potatoes and vegan meat loaves to little toasted pieces of bread. Cooled or warm, it’s always nice in colours, taste and nutritients and great to serve on any table. But it’s pretty “heavy” if you overeat yourself, because in spite of all the veggies, mayo is always a mayo, meaning lots of oil.
But we can indulge from time to time, can’t we? French salad today, Sataraš tomorrow. And we’re in perfect balance 🙂

- 400 g /4 cups green peas, cooked
- 100 g /1 cup carrots, small cubes, cooked
- 1 cup pickles, small cubes
- 1,5 cup apple, small cubes
- 250 g /2 cups silken tofu, small cubes
- 10 tbsp vegan mayonaise
- 2-3 tbsp lemon juice
- 1 tsp salt (or more, to your taste)
Peel and dice carrots. Cook them with peas till they are cooked but not mushy. Drain, cool.
Dice pickles, apple and tofu. Put everything in the big bowl along with carrots, peas, mayo, lemon juice and salt and toss gently to combine nicely. Check the seasonings.
Serve warm or cooled. Store in the refridgerator for up to 3 days.
