What do you eat for breakfast?
Do you have your breakfast at all? I must admit I’m not much of a breakfast person. For some strange reason, if I start eating stuff in the morning, I tend to be hungry all day and eating all day, which is not something both me and my weight appreciate doing. People usually don’t believe me when I say that and tell me, oh, but that’s not healthy, you have to have SOME breakfast! Well, I kind of, don’t. I start with a nice, hot cup of English breakfast tea with soy milk, also steaming hot. After I’m done with morning routine (read: get everyone ready for school and work), well then I might take a bite or two!
So I guess that puts me in the brunch category, which I find very comfortable and I’m thankful for that someone who invented a name for it!
But since it’s really not healthy nor very pleasing to go empty-bellied until the lunch comes, and at our home, it comes a bit late-ish, I like to eat something around 10.30 am. So what’s on the menu? Something lunch-like for me, I guess, but not quite. Some nice carbs, fibres, proteins and vitamins, here I come!
So one day, when it was almost noon and I was pretty hungry, I remembered that I have some leftover rice from yesterday waiting for me to think of something. Well, you can’t always eat rice with Kimchi, right? So I snooped through the fridge and thought, let’s make some proper breakfast with carbs and fruits and stuff! Like people usually do. So there was mango, my dearest, and there are always some nice nuts like almonds or walnuts in my pantry. And the rest is – history! Better say, this delicious recipe.
I loved this Mango Almond Coconut Rice so much! I made it again for my kids as an afternoon snack and they loved it too. And why wouldn’t they? It’s delicious, creamy, sweet and tangy, packed with great ingredients like fresh fruit, tasty and nutty almonds. Coconut cream and cinnamon give it a final, “desserty” touch (I know that’s not a word, but you know what I mean 😉 ) It makes you and your spoon very happy! And your tummy satisfied with this little bowl, or rather say, cup of delicious nutrients.

Mango Almond Coconut Breakfast Rice ✴ Make a breakfast celebration! Sweet and juicy fruit, enriched with almond and coconut over a bowl of soft rice. Great way to start a day!
- 1 ripe mango peeled, pitted, cubed
- 3 tbsp coconut cream (from one can of coconut milk)
- 3 tbsp maple/agave syrup
- 3 tbsp desiccated coconut or coconut flakes
- a handful of toasted almonds
- 2 tbsp cinnamon
- 2 cups cooked arborio rice
Put almonds in the food processor, pulse till they are finely ground, but not as almond flour.
Add mango, coconut cream, cinnamon and maple syrup and pulse till its all nice and creamy. You can leave few bits of mango, it doesn’t have to be all mushy.
Scoop half of the mango cream into the bowl. Add rice and desiccated coconut and stir till it’s all nicely combined. Transfer mango rice into two or more cups/bowls. Pour the remaining mango cream on top of the cups. Sprinkle with some coconut flakes and serve.
If your rice is cold, out of the fridge, just warm it up with some coconut cream on low heat, stirring constantly.
