In this time of the year we are gathering festive recipes for our tables. May it be Thanksgiving, Christmas, Chanukah or some other occasion, it is always nice to throw in a nice bowl of something else, to have few side dishes to chose from.
Mashed potatoes are classic dish around the world and there’s really nothing new about it because it has been invented and reinvented in million ways. So this one is just a reminder of how to do it a little bit differently, with some added proteins and great taste. It surely won’t be a center piece of your dinner but it’ll be a nice addition to your festive and everyday main menu.
Here’s how to make it:
3 cups of cooked potatoes
1 cup of cooked red lentils
2 – 3 tbsp of olive oil
1/2 tsp of nutritional yeast (optional, for cheesy taste)
1/2 tsp of garlic powder
salt to taste
pinch of hot Chilli flakes
Simply mash everything, prefferably with blender, to make it all smooth and creamy, and there you go. Simple as that.
This Red Lentil Mashed Potatoes are incredibly simple to make, especially if you’re already making something else and have leftover potatoes and lentils. You can season it as you like, add more or less of what I enlisted, just play and see what you like the best. For gluten free version be sure to always check nutritional yeast labels because there is a great chance it contains gluten.
