Caramelised onions over a hot bowl of polenta, simple yet so delicious vegan hearthy dish!
Cook polenta by the instructions on the package. Instant polenta needs much less time to cook. Plain polenta will need up to 15 mins with constant stirring.
Cook onions and oil on low heat, stirring constantly, till the onions are nice, slightly browned and caramelised. Watch it doesn't burn. Salt and pepper to taste, or even add some finely diced or powdered garlic.
Pour hot onions over hot polenta and there you go :)
