Ingredients
Onion & Tomato Chutney
  • 5 onions /3 c sliced
  • 1 ½ tsp salt
  • 3 tbsp brown sugar
  • 3 tbsp oil
  • 3 - 5 cloves of garlic minced
  • 1 tsp chilli flakes or red hot ground paprika or something as hot
  • pepper to taste
  • 5 – 6 ripe tomatoes /3 cups chopped
Black Bean Burgers
  • 2 c cooked black beans
  • ½ small onion / 3 tbsp minced
  • 1 clove garlic minced
  • 2 slices of bread soaked then squeezed to drain (1 cup packed)
  • 1 tsp salt
  • pepper to taste
  • fresh herbs chopped
  • fresh tomatoes, onions and lettuce for serving
  • vegan mayo for serving
Baked Potato Wedges
  • 7 – 10 potatoes / 7 c cut into wedges
  • salt
  • drizzle of oil
Instructions
Onion & Tomato Chutney
  1. Cook oil, onions, sugar and salt on low to medium heat, stirring constantly, till the onions are nice and creamy. Add minced garlic and cook just until it releases its scent.
  2. Add chopped tomatoes, chilli and pepper and cook, stirringly, until it’s all nice creamy and reduced to a jam-like consistency. Depending on tomatoes, this might take somewhat between 30 – 50 mins.
Black Bean Burgers and Baked Potato Wedges
  1. Start your oven to 180°C/375F.
  2. Put everything in the big bowl and mash with your hands. You can put it in the food processor too but don’t make a mush, you want it to have some pea-size pieces. From this amount, you can make 6 – 8 patties. Make a ball, flatten it to the thickness of your thumb and put on the baking sheet lined with baking paper.
  3. Throw in the potatoes too and arrange them on the baking pan. Drizzle with oil and bake for 40 mins or till potatoes are nicely golden brown.
Assembly and serving
  1. Cut the bun in half horizontally. Put some mayo on the lower half of the bun, then lettuce, fresh tomatoes and onion sliced, burgers, then some fresh veggies again and then the second half of the bun. Serve along with potato wedges and onion tomato chutney. Or however you fancy it. Just enjoy it!
