Vegan French Salad, perfect for your holiday make ahead list! Sweet & soft carrots & green peas, sparkly lemon & pickles, tofu & apples and creamy mayo!
Vegan Faux French Salad
Ingredients
  • 400 g /4 cups green peas, cooked
  • 100 g /1 cup carrots, small cubes, cooked
  • 1 cup pickles, small cubes
  • 1,5 cup apple, small cubes
  • 250 g /2 cups silken tofu, small cubes
  • 10 tbsp vegan mayonaise
  • 2-3 tbsp lemon juice
  • 1 tsp salt (or more, to your taste)
Instructions
  1. Peel and dice carrots. Cook them with peas till they are cooked but not mushy. Drain, cool. 

  2. Dice pickles, apple and tofu. Put everything in the big bowl along with carrots, peas, mayo, lemon juice and salt and toss gently to combine nicely. Check the seasonings. 

  3. Serve warm or cooled. Store in the refridgerator for up to 3 days.
